Traditional Conch Fritters1 small green bell pepper, finely chopped 1 small onion, finely chopped 1 stalk celery, finely chopped ½ cup mild 2 tblsp. tomato paste 1 tsp. baking powder 1 cup flour ½ tsp. salt 1 tsp. Tabasco, or hot sauce 1 egg, separated vegetable oil for frying Mix together all ingredients except for the egg white. Beat egg white until stiff and fold into batter. Drop by teaspoonful into hot oil and fry until golden brown. Preparation time: 10 minutes Cooking time: 20 minutes Serves: 4 Serve with red sauce or tartar sauce, and a cold beer. |
